There is nothing like buying and eating a ‘tube steak’ from a vendor on the street. The NY ones were made by Sabrett. The vendor would open the steam cabinet and place the dog on the bun. He would then smear it with mustard or ketchup with a stick that stayed in the jar. He would then ask if you wanted sour kraut and onions. The kraut and the onions came out pots on the steamer. The onions were cooked in a red sauce.

Bob,
There are still hot dog carts around here with umbrellas covering them. I stop once in a while to get my hot dog fix. I add mustard, relish, as they never have piccalili, and onions.
