I remember my grandfather would bring home breakfast supplies for my grandma on his way back from the synagogue everyday after the morning service. He would stop at the, bagel bakery and at the egg store and the guy would hand pick the eggs for my grandfather and candle them individually. That meant that he had a candle burning with a dark background and he held each egg up to the light and to see if the yoke had an imperfection or a baby chick inside through the shell.

When I was shopping in the market in Ghana, I always went to the same egg man. He’d hold the eggs up to the sun so I could see the level inside the yolk. If someone went by my house, I’d drop the eggs into a bucket filled with water and buy the ones which dropped to the bottom.
