    Deviled Eggs Sprinkled with Bacon Bits

    INGREDIENTS
    12 eggs
    ½ cup mayonnaise
    ½ cup HORMEL® Real Bacon Bits plus more for garnish
    2 tablespoons finely shredded Cheddar cheese
    1 tablespoon mustard

    DIRECTIONS
    1. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water 10 to 12 minutes. Remove from hot water and cool. To cool more quickly, rinse eggs under cold running water.
    2. Peel hard-cooked eggs and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, bacon bits and cheese. Stir in mustard. Fill egg white halves with yolk mixture. Sprinkle more bits on top. Refrigerate until ready to serve.

      I love deviled eggs. When my friend asks what I want her to bring, I always say deviled eggs. This is different than the usual so I’ll be glad to try it!!

    Breakfast Bacon Burrito

    Make any morning better with 100% real bacon.
    INGREDIENTS
    12 large eggs
    2 cups shredded Mexican cheese blend, divided
    1 (3-ounce) jar HORMEL® Real Bacon Bits, divided
    2 tablespoons butter or margarine
    6 CHI-CHI’S® 8-inch Flour Tortillas
    1 cup CHI-CHI’S® Thick & Chunky Salsa

    DIRECTIONS
    1. In large bowl, stir together eggs, 1¼ cups cheese and ½ cup bacon bits.
    2. In large nonstick skillet, melt butter over medium heat. Add egg mixture; cook, stirring frequently, 5 to 8 minutes or until eggs are set but still moist.
    3. Meanwhile, wrap tortillas in plastic wrap. Microwave on HIGH (100%) 30 to 60 seconds or until warm.
    4. Spoon egg mixture down center of warm tortillas. Top each with salsa and remaining ¾ cup cheese and bacon bits. Roll up tortillas burrito-style. Serve immediately.

      I haven’t made a breakfast burrito though I have had huevos rancheros so I am open to Mexican for breakfast. This one sounds great.

    COMPANY CHEESECAKE
    1 1/4 c. graham cracker crumbs (about 15 squares) or 1 1/4 c. finely crushed
    whole wheat flake cereal
    2 tbsp. sugar
    3 tbsp. butter, melted
    2 pkg. (8 oz. each) plus 1 pkg. (3 oz.) cream cheese, softened
    1 c. sugar
    2 tsp. grated lemon peel
    1/4 tsp. vanilla
    3 eggs
    1 c. dairy sour cream or cherry, strawberry or blueberry glaze
    Heat oven to 350 degrees. Mix cracker crumbs, 2 tablespoons sugar and the butter. Press in bottom of 9-inch springform pan. Bake 10 minutes; cool.
    Heat oven to 300 degrees. Beat cream cheese in large mixer bowl. Add 1 cup sugar gradually, beating until fluffy. Add lemon peel and vanilla. Beat in 1 egg at a time. Pour over crumb mixture.
    Bake until center is firm about 1 hour. Cool to room temperature. Refrigerate at least 3 hours but no longer than 10 days. Loosen edges of cheesecake with knife before removing side of pan. Top with sour cream or glaze. 12 servings.
    GLAZES:
    CHERRY:
    1 can (16 oz.) pitted red tart cherries, drained (reserve syrup)
    1/2 c. sugar
    2 tbsp. corn starch
    4 drops red food color
    Add enough water to reserved cherry syrup to measure 1 cup. Mix sugar and corn starch in saucepan. Stir in syrup mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in cherries and food color. Cool completely.
    STRAWBERRY:
    Arrange 1 cup sliced strawberries on cheesecake. Heat 2/3 cup strawberry jelly and 1 teaspoon lemon juice, stirring constantly, until jelly is melted and smooth. Remove from heat; let stand 5 minutes. Pour over strawberries just before serving.
    BLUEBERRY:
    Drain 1 can (16 ounces) blueberries, reserving liquid. Add enough water to measure 1 cup. Mix 1/2 cup sugar and 2 tablespoons corn starch in saucepan. Stir in the 1 cup liquid. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir in blueberries; cool

    SLO-COOKING BUFFALO-CHICKEN SOUP

    Ingredients
    2 1/2 Pounds of skinless boneless Chicken breast
    2 Bottles Louisiana Supreme Chicken Wing Sauce
    1 Pound shredded sharp cheddar cheese
    1 Quart Half & half
    8 Tablespoons butter
    8 Tablespoons flour
    32 Ounces chicken stock
    1/2 Cup chopped red onion

    Celery and blue cheese as much as you like.

    Instructions
    Take the chicken and place in a pan that has a cover. Take one bottle of wing sauce and add it to the chicken. Simmer this until the chicken is cooked. Remove chicken, let chicken cool and when cooled, shred with fork and add to Crock-Pot®. Take the liquid that cooked the chicken and pour that into the Crock-Pot®. Take the same pan and melt butter, add the flour to make a roux. While on low heat, stir until you get a nice nutty smell coming from the mixture. Do not let it get too brown, a nice light roux works good. Once you have a nice roux, add the half and half and stir. Now start to add the cheese until completely melted. When it starts to thicken remove from heat and add to Crock-Pot®. Pour the chicken stock into the crock-pot and mix. You can add the red onion. Do not use any salt when making this. The cheese will add a lot to it. Now take the second bottle of wing sauce and add as needed. I like it warm so I use the whole bottle.

      I love slo-cooker recipes. Put in the ingredients, turn it on and let the cooker do its stuff. When I was working, I’d make dinner in the morning and have enough for a few nights. I was happy to come home to a wonderful smell from the kitchen.

      This is another band I really know little about. I think this is the first song I’ve heard that lets me identify the singers. It’s good!
