“Vegetables are a must on a diet. I suggest carrot cake, zucchini bread, and pumpkin pie.”

Warm weather is coming. Starting tomorrow it will be in the 50’s for the next four or five days. My only wish is that the wind takes a break and stays off-shore so we can enjoy the weather. Gracie and I have a few things to do this morning then we’ll be back to watch the Red Sox play their home opener. Never in my scariest nightmares did I expect them to be 0-6 to start the season. Maybe playing the Yankees this afternoon will raise them to a higher plane.

I don’t cook for myself very often. It just seems too much trouble to pull out the pots and pans. Most times I just fall back on cheese and crackers or a sandwich. I keep hummus in the fridge, and there are always eggs, but, if the truth be told, my diet is sadly lacking in vegetables though I do take vegetable credit for coleslaw with its cabbage and carrots. I really like vegetables so there are no reasons to avoid them. I swear it’s just laziness as most go best with a meal to complement them. Carrot sticks might just be my salvation.

I don’t think I have had okra since I was in Ghana, but okra stew was one of my favorites though I had to overcome the slime when I first ate it. In the far north where I lived, it was often served with tuo zaafi, better known as T-zed in English. T-zed is like a thick porridge and locally it was made from millet. I’d grab a piece of T-zed and then dip it into the stew. It was delicious. Groundnut stew was another favorite to eat with T-zed. I never would have imagined a soup with a peanut butter base, but it was wonderful. Usually it came with chicken.

In Bolga, chop bars lined the lorry park. They were hole-in-the wall places to eat with unmatched tables and rickety stools or chairs. In the back, the sound of fufu being pounded was a sign dinner was nearly ready. I’d buy my fufu with whatever stew was available, place it in a pot and drive it home on my motorcycle holding the pot with one hand and steering with the other. I guess I’d call it take out.

At the moment I´m in a period when I really don´t like cooking, but I do hope it ends before summer anyway 🙂

For me it´s the tomatoes that saves me 🙂 If I don´t eat any other vegetable I´ll at least have a tomato 🙂

We reached 59F today and I could walk with my dogs with only a sweater on, but the winds have changed direction just slightly so now we really can feel it here in the village 🙂

    Have a great day now!
    Christer.

      Christer,
Cooking for me just seems to be too time consuming, and I end up with leftovers too many times.

Homegrown tomatoes are my all time favorite, but they don’t come until August. I do eat a lot of corn in the summer, but I am horrible in winter.

      60’s coming by Monday.

Tigers home Opener today. Worked like crazy at PT including steps with the right leg.

      My Dear Hedley,
I have the feeling you might overdo-just be be careful! It was the Sox home opener as well. Finally they won a game, and their bats were reanimated.

Well that take out picture made my day. I loved going to those drive ins and kidding with the girls. The ones in our busy town came from the kitchen wearing roller skates. For more of a tip they did skate shows and we loved eating and watching them twirl and just do flat out fun things. I can see you on the bike Kat.

      Z&Me,
I loved watching them roller skate carrying those trays. It always amazed me they could do both.

I would have loved being on the bike.

We have standard fried okra often; unfortunately, when my nephews visit, one of them expects more than his fair share.

    Cheers

      Minicapt,
I copied the recipe. It might be a great way to introduce okra to my friends who think they don’t like it because it has a weird reputation.

That last line gives me a laugh over here in Jersey… 🙂

I live by myself and don’t cook either…virtually every night is takeout, and I have made many friends in my travels to different delicatessens, restaurants, and other eating establishments in my area.

One of my favorites is an actual-drive in called the Circus in Wall NJ. (www.circusdrivein.com) They do the whole gig right down to the carhops. It usually opens the last week in March and closes in October. Went there the other night after work and darned near froze to death while wating for my food (35 degrees out). Love their burgers and malts!

Glad to see your Sox will not go 0-162 this year.

If you keep one eye out on the Mets all year, do you know about the knucleball pitcher R.A. Dickey? Quite the intelligent guy. He majored in English Lit at the University of Tennesee – – – with a 3.35 GPA no less!

      Coleen,
I buy the cooked chickens from the deli and already prepared foods from some favorite stores. I have to heat the food so it gives me the illusion of cooking.

I don’t think there are any left around here. A&W Root Beer was the last one I remember. We went there often, and I loved their bacon burgers.

      Good Sox game!

I am most impresses by R. A. Dickey, and I think I’ve watched him pitch. Wakefield has played so long for the Sox, and I enjoy watching a knuckleballer pitch so I think that’s why I remember seeing him.
